Pharmacist Wilbur Scoville developed the Scoville Scale to measure the heat of chili peppers, using the human tongue to detect capsaicin (the chemical that makes peppers hot). A bell pepper gets a 0, while some peppers burn in at over a million! Tabasco Sauce scores 2500-5000.
