The Fifth Taste

Along with sweet, sour, salty, and bitter, the fifth basic taste is umami (Japanese for “delicious”). Named by chemist Kikunae Ikeda, umami is the savory flavor of foods like meat, ripe tomatoes, and cheese. It is created by the amino acid L-glutamate.
